Recipe Snapshot: Alabama Chicken Casserole

Alabama Chicken Casserole

2 to 3 c. cooked chicken, chopped
4 eggs, hard-boiled, peeled and chopped
2 c. cooked rice
1-1/2 c. celery, chopped
1 onion, chopped
2 10-3/4 oz. cans cream of mushroom soup
1 c. mayonnaise
2 tbsp. lemon juice
3-oz. pkg. slivered almonds
5-oz. can chow mein noodles

Mix all ingredients except noodles in a large bowl. Transfer to a greased 13"x9" baking pan. Cover and refrigerate overnight. Uncover and bake at 350 degrees for one hour, or until hot and bubbly. Top with noodles; return to oven for 5 minutes. Makes 10 to 12 servings.
