Recipe Snapshot: Roasted Green Beans

I've only recently discovered the beauty of the fresh green bean. In the past, I had only experienced them as slightly raw and unsalted laying by an entree at a restaurant. Yuck! But, I now realize what I've been missing out on and am trying to make up for it by cooking more dishes that require fresh green beans. So, I was really drawn to this recipe since it also requires one of my favorite ways of cooking vegetables - roasting! This recipe is just a complete winner all the way around. Roasted Green Beans

1-1/4 lbs. green beans
1 tbsp. lemon juice
2 tsp. olive oil
1/4 tsp. garlic powder
1/4 tsp. dried basil
1/2 tsp. salt
1/4 tsp. pepper

Toss together all ingredients on an ungreased 15"x10" jelly-roll pan. Bake at 450 degrees for 10 minutes, or until tender. Serves 4 to 6.

  1. I've been roasting asparagus for a while. Just never thought of doing it with green beans. Can't wait to try it. I think they'll be 10 times better!
