I chose this recipe for one simple reason. I love the combination of dill pickles and potato chips. And, this dip was delicious with its tart and salty blend. I loved it! Plus, it's just one of those recipes that can be quickly whipped together with items that are probably already in your refrigerator. This recipe is from Gooseberry Patch's Quick and Easy Christmas, copyright 2011.
Dill Pickle Dip
8-oz. pkg. cream cheese, softened
2 c. sour cream
5 to 6 whole dill pickles, chopped
1-1/4 tsp. garlic salt, or to taste
Optional: pickle juice
potato chips
Mix together all ingredients except chips. If using, stir in pickle juice to desired consistency. Cover and chill 24 hours. Serve with chips. Serves 6 to 8.

ReplyDeleteAlthough the recipe was in a Christmas cookbook, I think it's perfect for the summer. It's great with potato chips but I think would be good as a dip for fries, chicken fingers, or fried seafood. Very versatile and yummy!
