Toffee Apple Dip

I'm still on an apple kick here. And, my friend, Julia, informed me that no apple recipe collection would be complete without my Toffee Apple Dip. I've made this dip for numerous parties and showers at the request of the hostesses and honorees. Although I always serve it with apples, I also like to include some graham cracker sticks or teddy grahams. I've also seen people simply eat it with a spoon...

When I served this dip at Julia's baby shower, I packed up the leftovers for her to take home. After I got home, I realized that I had accidently brought the apples back home with me. I called to let her know that she may want to stop on the way home to pick up some more apples. Her response, "I really don't think I'll need the apples..."

Toffee Apple Dip

1-8 oz. pkg. cream cheese, softened
1/2 stick (4 oz.) butter, softened
3 tbsp. powdered sugar
1/2 cup brown sugar, firmly packed
1 tsp. vanilla extract
1-8 oz. pkg. toffee bits
Sliced apples

With the mixer on low, combine the cream cheese and butter until well blended. Add the powdered sugar, brown sugar, and vanilla extract. Mix until well blended. Reserve about 1/4 of the toffee chips, set aside. Pour the rest of the toffee chips until the mixture and fold in with a spoon. Refrigerate the dip until well chilled, preferably overnight. Right before serving, sprinkle the reserved toffee bits on top. Serve with apples.

As the dip chills, the toffee bits will start to break down and form a gooey caramel-like swirl that is luscious!
