Roasted Broccoli

This is my family's favorite way to eat broccoli and it's so simple to make that I'm almost embarassed to even post it here. But, I didn't want you to think that the only way I eat vegetables is fried in bacon. Not that I see anything wrong with that...

Roasted Broccoli

One head of broccoli cut into bite-sized pieces
Olive oil
Kosher salt
Course ground pepper

I feel healthier already.


Preheat the oven to 400 degrees. Cut the broccoli into bite-sized pieces. Place on a greased foil-lined baking pan. Drizzle with olive oil and sprinkle with kosher salt and pepper. You should use your desired amount. Lemon pepper is also a good addition. I like to use my hands to make sure that the olive oil and seasonings are equally distributed. Bake in the oven for about 15 minutes, stirring every few minutes or so to prevent burning. If you like your broccoli firm, remove after about 10 minutes; if you like your softer, cook a little longer. You're the boss!

I love the way crispy saltiness of it. And, one of my little boys loves it which makes me happy!
