Finally Fall and Apple Cookies

Every year, Gooseberry Patch releases a fall cookbook. Last year's cookbook was Autumn with Family and Friends. I have all of the fall books and consider this one of the best fall books ever. Because fall finally arrived this week, I decided to make a recipe from this cookbook. Yes, I love apples and cinnamon. It's probably one of my favorite flavor combinations. This recipe is from Autumn with Family and Friends, copyright 2009.

Brown Sugar-Apple Cookies

1 c. brown sugar, packed
2 eggs, beaten
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. shortening
2 tsp. vanilla extract
2 c. all-purpose flour
1 c. apples, cored, peeled, and sliced

Mix all ingredients together, stirring in apples last. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Makes 3 1/2 to 4 dozen.

Brown sugar is so pretty. Don't you think?


One of the things that I liked about this recipe is that I could dump all of the ingredients into one bowl and mix. This batter was thick and I actually had to get my hands in there to get it blended.

I chopped my apples into small pieces.

I always use parchment paper on my cookie sheets. Maybe one day I will be able to afford a Silpat.
