Apple-Broccoli Salad

Apple-Broccoli Salad

OK, so I feel a little strange posting the title Apple-Broccoli Salad because I didn't actually use any apples in my dish. I'm on a low-carb diet so left the apples out. I would have used the apples had I not been on this diet. However, as you can see from the list of ingredients, there are also no raisins in my dish, either. There are no circumstances in this world that would warrant me using raisins in anything that I'm preparing. Yuck! But, you go right ahead and add them if you like that sort of thing. This recipe is from Gooseberry Patch's Big Book of Home Cooking.


Apple-Broccoli Salad

4 c. broccoli flowerets
1/2 c. raisins
1/2 c. chopped pecans, toasted
6 slices bacon, crisply cooked and crumbled
2 Red Delicious apples, cored and diced
1 red onion, chopped
1 c. mayonnaise
1/2 c. sugar
2 tbsp. cider vinegar

Combine first 6 ingredients in a large bowl. Combine mayonnaise, sugar and vinegar; add to the broccoli mixture, stirring to coat. Cover and chill. Serves 6.


Because I wasn't using the apples and raisins, I cut the sauce ingredients by half. I cut back a little more than half on the sugar. I've had this salad before and always thought it was too sweet.


I also cut the broccoli into tiny, bite-size pieces and eliminated much of the stems. I think it made it easier to eat. This salad is delicious and is the perfect side dish for summer entertaining.

  1. "There are no circumstances in this world that would warrant me using raisins in anything that I'm preparing. Yuck!" That statement just propelled you into my list of most admired people - LOL! I have tried SO hard to like raisins and finally admitted defeat.

    I like what you did with the salad in making the flowerets smaller and using less sugar. And leaving out the raisins is just a given with me. Big hunks of broccoli are hard to eat and don't have a nice ratio of dressing, IMO. A vast improvement on a standard recipe.
