Recipe Snapshot: Chicken and Rosemary Pizza


This recipe just sounded delicious. Plus, I had fresh parsley and rosemary in my herb garden and I'm always looking for ways to use them. And, here's a confession: I've never made pizza before so I was anxious to step out of my comfort zone and give this pizza a try. It was a success! I grilled two bone-in chicken breasts so that I would be working with maximum flavor. The chicken blended so well with the rosemary, garlic, and onions. Chicken and Rosemary Pizza

2 c. shredded mozzarella cheese, divided
2 c. cooked chicken, chopped
1 c. red onion, sliced
1/4 c. fresh parsley, chopped
2 tbsp. olive oil
2 cloves garlic, minced
1 tbsp. fresh rosemary, chopped
1/2 tsp. salt
1/4 tsp. pepper
13.8-oz. tube refrigerated pizza dough

In a bowl, toss together 1-1/2 cups cheese and remaining ingredients except pizza dough. Roll out dough onto a lightly greased baking sheet. Spread cheese mixture onto dough to within 1/2 inch of the edge. Sprinkle with remaining cheese. Bake at 425 degrees for 18 to 22 minutes, until golden. Let stand 10 minutes before slicing and serving. Serves 4 to 6.

  1. Sounds yummy. I am always looking for new ways to use chicken. Ive made rosemary chicken before and really liked it, so this sounds just as good.

  3. I have a huge rosemary bush in the front yard so anything with chicken and rosemary sounds good to me!!! We are about to sprout feathers and lay eggs at our house from all the chicken!!

  4. if you're worried about it being dry you could always brush the pizza dough with a little olive oil...to make it even better you could add some garlic to that oil. I worked at a pizzeria and the sauce choices they had were red sauce and garlic oil and their garlic oil pizzas were never dry.
