Brownie Crackles


Even though the kids and I are home for Christmas break, I'm still working hard in my kitchen baking cookies. I have a care package to ship out this week. And, what package would be complete without a tin full of cookies and treat? These cookies are my first foray into the world of the crackle cookie. Do you remember when I said that I keep brownie mixes on hand because I never know when I'll need one? Well, when I read this recipe and saw that it was made from a brownie mix, I knew that I had to try it. I think these cookies are even better than brownies. They're soft and chewy and oh so rich. This recipe is from Taste of Home's Best Loved Cookies and Bars, copyright 2009.

Brownie Crackles

1 package fudge brownie mix (13"x9" pan size)
1 cup all-purpose flour
1 egg
1/2 cup water
1/4 cup canola oil
1 cup (6 oz.) semisweet chocolate chips
Confectioners' sugar

In a large bowl, beat the brownie mix, flour, egg, water and oil until well blended. Stir in chocolate chips. Place confectioners' sugar in a shallow dish. Drop dough by tablespoonfuls into the sugar; roll to coat. Place the cookies 2 in. apart on greased baking sheet. Bake at 350 degrees for 8-10 minutes or until set. Remove from pan to wire racks to cool. Yields 4-1/2 dozen.

Place the brownie mix in a large bowl.


Add one cup of all-purpose flour.


Next comes the liquid ingredients: one egg, water, and oil.


Using the mixer, beat until smooth. The batter will be thick.


And, to make things even richer, add a cup of chocolate chips.


Stir the chips into the batter.


I see you trying to hide in there.  Although the recipe didn't call for it, I decided to chill the dough for a few minutes. But, once I got started, I'm not sure if that's even necessary. However, I do like to keep my dough in the fridge between batches just to be safe.


Pour some confectioners' or powdered sugar in a small bowl. I used about one cup.


To make this process cleaner, I used a large dinner spoon to scoop out the batter. Then, I used a small spatula to scrape the batter from the spoon. This way my hands only had to touch the sugar, not the batter.


Roll the dough in powdered sugar. I kept a damp paper towel beside me to clean my fingers while getting the next scoop of dough ready. P.S. Do not wear a black sweater while doing this. Trust me!


I placed the dough on parchment-lined cookie sheets. I baked for ten minutes. Apparently, I was more generous than I should have been. I only ended up with a little over three dozen cookies.


I ate these warm out of the oven. They were so good that I almost cried. I think that Santa will be pleased.

  2. These cookies were even better than I expected. Using the brownie mix made them soft and chewy. My brother loved them and was still talking about them on New Year's Day. I hope your family enjoyed them, too.
